Quando saber qual delas usar? A melhor maneira é aprender e praticar combinações com esses verbos:
We finish: a sentence, an activity, a sandwich, doing something (working, studying, writing etc), an exam, ...
We end: an affair, a relationship, a letter, in trouble, in a fight...
We use finish/end: My favorite TV show ends/finishes at 9pm. The Brazilian academic year finishes/ends in December.

a) Acabou o pão. Você pode comprar alguns?
b) O terremoto acabou com a pequena vila.
c) Ela insistiu tanto que acabei indo ao cinema com a sua amiga.
d) Acabamos de descobrir que a prova será amanhã!

Acabar como sinônimo de destruir, não restar nada:
- The stock market crash ruined him, so he has no money.
Acabar como sinônimo de há poucos instantes:
- She has just arrived from Paris. Let's ask her about the experience.
Acabar como sinônimo de finalmente, no final das contas:
- He's been unhappy with his job for some time. He'll eventually quit if nothing changes soon.
- Your time is up!
Acabar como sinônimo de parar, não continuar:
- Hey, boys... stop this fight right now!
- She was worried about the job interview but it turned out really well.
